Turkish Yogurt Cake with Figs

When it is fig season, try out this recipe for a light and fluffy turkish yogurt cake topped with figs. It's the perfect cake for summer, so make sure to enjoy it with a refreshing drink on a sunny afternoon.

Ingredients

  • 4 eggs, separated
  • 1/2 cup granulated sugar
  • 3 tablespoons plain flour, sifted
  • 1 1/2 cups full fat Greek yogurt
  • grated zest of 1 unwaxed lemon
  • juice of 1 lemon
  • 1 1/2 teaspoons orange blossom water
  • 4 fresh figs, sliced from the top down

Instructions

  1. Heat the oven to 350 F (180 C).
  2. Lightly rub a spring form pan with butter.
  3. In a large bowl, beat the egg yolks with the sugar until light and fluffy.
  4. Gradually add the flour and mix.
  5. Mix in the yogurt, lemon zest and juice.
  6. Add orange blossom water.
  7. With an electric beater, whisk egg whites until firm and fluffy.
  8. Gently blend into yogurt mixture.
  9. Pour mixture into spring form pan and place the fig slices on top.
  10. Bake for 50 minutes or until the top is browned.
  11. Let cake cool before serving.

Notes

  • You can try to use half fat or 0% fat Greek yogurt, but there is a risk they are too watery.
  • If you cannot find orange blossom water, you can use 1/2 teaspoon orange extract and 1 teaspoon of water to replace 1 1/2 teaspoons orange blossom water.
  • Fresh figs will be difficult to find, so you can try with other fruits as well (e.g. apples, pears, strawberries).
  • A springform pan is the easiest pan to bake this cake given the soufflé style of the cake.
  • The cake will rise like a soufflé but will subside when removed from the oven.
  • Best on day of baking.
