Flaxseed Honey Roasted Carrots

These oven roasted carrots with flaxseeds and honey are great as a side dish, or as a snack. A very easy recipe which gives you nutrients essential for human health and good balance: carrots contain antioxidants and flaxseed oil has omega-3 fats.


  • 12 medium-sized carrots
  • 1 tablespoon mild honey
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar (or brown rice vinegar or apple cider vinegar)
  • juice of one lemon
  • a pinch of sea salt
  • 1 tablespoon flaxseeds
  • 2 tablespoons flaxseed oil


  1. Preheat oven to 350 F (175 C).
  2. Remove tops from carrots and rinse thoroughly to remove any dirt (do not peel).
  3. In a large bowl, prepare the marinarde by whisking honey, lemon juice, olive oil, vinegar and salt.
  4. Place carrots in the bowl, toss to coat until evenly coated, and let marinade for at least 40 minutes.
  5. Pour carrots and marinade onto a rimmed baking sheet, and sprinkle with flaxseeds. Make sure carrots are in a single layer on the sheet pan so they cook evenly.
  6. Bake for 40 minutes to 1 hour (or until carrots are tender and browned, and you can fork them easily), turning them around a few times.
  7. Serve with flaxseed oil, salt and pepper.


  • Keep an eye on the carrots when baking and make sure they do not overcook, as the optimal roasting time actually depends on carrot size.
  • Cut carrots lengthwise in halfs or quarters if you have large carrots. This is not needed with medium-sized carrots or baby carrots.
